The name Bollywood Masala literally represents today{s India - food cooked true to its rich heritage, but presented with an understanding of modern India{s identity.
Today, the term Bollywood, with all its colour, vibe and ubiquitousness, means India to the most non-Indians. The word Masala represents centuries of use of spices to bring out the best in Indian food. To use these words together mean a philosophy to follow as a modern Indian restaurant - to remain true to our gastronomic roots, but present our food and ambience in a modern indian way.
Bollywood Masala is not a theme restaurant. Indeed, the only obvious link to our proudly Indian heritage is an ornate, old Indian door. Where we really dig deep into our food heritage is to stay true to the cooking methods of old wherever possible. As an example, our garam masala, a core ingredient in North Indian cooking, is made in-house. Similarly, paneer cheese and dahi (Indian style yoghurt), two other key ingredients, are also made in-house.
We also continue to use real saffron, and use only quality ingredients and spices. On our menu while you will find the traditional Dal Makhni ( we call it Dal Bollywood - heaven in a bucket according to the Canberra Times), Butter Chicken, Rogan Josh or Vindaloo, but you will also find innovations such as stuffed squid, stuffed spatchcock, leg of lamb(our speciality), sundried tomato naan and fig and almond kulfi (kulfi is a traditional Indian icecream, and yes, made in-house)
